These Paleo Sunbutter Protein Bars are a copycat version of the Peanut Butter RXBar. They are no-bake, have only 5 real ingredients, and are so delicious! Whole30, gluten free, and dairy free!
When making my first copycat RXBar I went with the chocolate sea salt because that's my favorite flavor. I shared them with my brother-in-law who loves them and I asked what his favorite flavor is. He said peanut butter so I knew I had to try to recreate it. I personally haven't had the peanut butter one, but my brother-in-law gave it the approval and said it's as close as possible without using actually peanut butter! 🙂
The sunflower butter and sunflower seeds taste very similar to peanut butter, but they are conveniently nut free making them perfect for packing in school lunches or making for anyone who has an allergy. Using the seeds also makes them paleo and Whole30. Just like last time I'm going to warn you about eating these on a Whole30- don't use them as dessert!
I cut the bars into 10 this time so the nutrition facts are as close as possible to the original.
Orignal bars: 210 calories, 8g fat, 6g fiber, 15g sugar, 12g protein
My bars: 263 calories, 15g fat, 4g fiber, 15g sugar, 13g protein
Pretty close and so much for affordable to make at home!
These bars are chewy and soft and make the perfect snack. My toddler couldn't keep her fingers out of them. They were on a low shelf and every time I opened the fridge she would take a little piece. I love that she likes them I feel good about her eating a snack with healthy fats and a natural sweetener.
I make these in a food processor, but they can also be made in a high powered blender as well. Here is the egg white protein I used. You could also use collagen peptides instead for added health benefits.

Paleo Sunbutter Protein Bars (Copycat Peanut Butter RXBar)
Ingredients
- 1 cup raw sunflower seeds
- ½ cup no sugar added SunButter
- 2 cups dates
- 1 cup egg white powder*
- ½ teaspoon salt
- 2-4 tablespoons water
Instructions
- Place sunflower seeds, sunbutter, and dates into a food processor or high powered blender. Process until mixture starts to come together.
- Add in the egg white powder and salt and process, adding a tablespoon at a time until the mixture is mixed. Process on high for a minute before adding more water.
- Press into prepared pan and refrigerate.
- Cut into 10 bars.

Made this with peanuts and pbutter- tastes amazingly like rxbar. Only tweak I will make next time is grinding nuts first before adding the dates and pbutter since the mixture got too warm and melted the pbutter making the bars oily.

I've made these a couple times now using peanuts. I bought all ingredients, including the egg white powder, at Trader Joes and I think they are pretty good. I process 2 cups peanuts and one 16 oz pkg of Medjool dates in my Cuisinart. Then transfer the mixture to my KitchenAid bowl. I add in 1 cup peanut butter and 2 cups egg white powder, and enough water to make it stick together. I found doing the whole thing in the food processor was too much, but I like doing a double recipe. I got 18 yummy bars.

I tried the peanut butter berry Rxbar today, and it really does taste like a pb and j sandwich. Can you suggest how I could add raspberries to this? As fruit? Or preserves? Thanks so much

Hi Terry- what a great idea. I'm guessing dried fruit is used, but you could also possibly use freeze dried which adds a stronger flavor. My thought is to take 1/2 or 2/3 of the mixture a press it into the pan. Add the fruit to the remaining mixture and blend again until mixed. Add on top or mix as desired to the plain mixture. Does that make sense?

Thanks for the recipe! I tried to make these but mine. are falling apart and do not hold together. Any suggestions? More water?

You're welcome, Joyce! I'm sorry they are falling apart. If it looks like they are too dry then yes, add a little water at a time until them clump together. You may just need to process it a little longer to make all the ingredients combine more. I hope that helps and that they were still enjoyed.

They have a similar consistency to the peanut butter RX bar But not even close to the taste. More like a sunflower RX bar.

If I'm not allergic to peanuts and not strict on doing whole30, can I substitute the sunbuttee with peanut butter? And do I use peanuts instead of the sunflower seeds?
My husband and I both love peanut butter and would love to try recreating the rxbar without using different ingredients. Thank you!
