This Paleo Whole30 Stuffed Pepper Soup is easy to make and so hearty. All the flavors of a stuffed pepper in soup form. Gluten free, dairy free, and low FODMAP. Made in the Instant Pot or on the stove top.
Updated September 2018 by adding photos without rice. Recipe is the same.
I'm back with another amazing soup. They are definitely a favorite of mine during the colder months, and judging on how popular they always are, you guys love them as well.
Last year I made some stuffed peppers for the site, but I wasn't happy with the pictures so I never shared them. When I thought about remaking them to share, I came up with the idea to turn it into soup. I know I'm not the first one to think of it 😉
This soup is packed with deliciousness. Lots of bell peppers, fire roasted tomatoes, grass-fed ground beef, and seasonings that give it so much flavor. Yes, there is white rice in some of these pictures. We tolerate white rice ok and if you do as well then I highly recommend it! If you're doing a Whole30 or can't handle rice, then use cauliflower rice or leave it out. It's still hearty and flavorful without it.
I made this twice in one day to try it out both on the stove-top and in the Instant Pot. As usual, the Instant Pot version was my favorite. It was less hands-on time and came out just as good as the stove-top version.
This recipe is low FODMAP which means no onion, garlic, or green peppers. If you don't need it low FODMAP then feel free to add regular onion with the peppers, use green pepper if you'd like, and garlic instead of garlic oil.

Love this soup. Making it a second time this week. I always like to put a dish like this in the freezer for later.

Thanks, Judy! I'm so glad you like it!
Rachal says
I am planning on having this as a side dish at a family get together. What is the serving size?
Jessica DeMay says
Hi Rachel- as a side dish I'd say it would serve 10-12. Hope everyone loves it!
Stacy Brule says
I went on the whole 30 and made this and it was wonderful I’ve made it several times since along with the cauliflower rice and it fills me up and is so good
Jessica DeMay says
Thanks for trying it, Stacy and I'm so glad you like it!
Charlene says
on Paleo or Keto recipes is there a reason they do not put nutritional values of these recipes?
Being diabetic I must list cal. pros, fats, carbs.
Jessica DeMay says
Hi Charlene- myself as well as many others don't count calories or fat because we focus on eating whole, real foods. You can use a site like My Fitness Pal to calculate it for you if needed. I can tell you that this soup is low carb, high fat and protein. Hope you try it!
Samantha says
When you say strained tomato’s or tomato sauce...can you clarify? Do you mean a cup of tomato juice? And if I use tomato “sauce” is that the same as tomato paste?
Jessica DeMay says
Hi Samantha- strained tomatoes are just tomatoes, but like a sauce. The jar will say strained tomatoes. Tomato sauce very similar, but usually has onion and garlic added which makes it not low FODMAP (if you need it). Tomato sauce is easier to find, but don't confuse it with pasta sauce- that's different. And it's not the same as tomato paste. Tomato paste is very thick and has more of a strong flavor. I have even taken some diced tomatoes and blended them until smooth and used it. I hope that helps and let me know if you have further questions.
Marianne says
Hi Jessica, for the stove top version, it might help to write that you add in the cooked rice at the end. The way it is worded sounds incomplete. Great recipe!
Jessica DeMay says
Thanks, Marianne. I just updated it.
Linda says
What is the serving size, and
how many calories per serving?
Jessica DeMay says
Hi Linda- it is not my place to tell you how much to eat. That is very individualized. I will sometimes give estimates so you know about how many it will serve, but I don't want you to be locked into a number that someone on the internet (me) has given you. And I don't count calories but there are many sites that help you figure it out if needed.
Caitlyn says
Can you cook this soup in a crock pot ?
Jessica DeMay says
Hi Caitlyn- yes, just add everything (brown the meat first) and cook on low 6-8 hours or high 3-4.
Karen says
If I use a crock pot- can I add the rice uncooked at the beginning or does it need to be added cooked at the end? Just trying to avoid the extra dish 🙂 Thanks!
Jessica DeMay says
Hi Karen- I don't know for sure with a crockpot since I don't use one. I think if you add it uncooked then you'll need to add more liquid because it will absorb it. I hope that helps!
Amanda says
This looks so good! Could I use brown rice? Would I need to do anything different if I do?
Jessica DeMay says
Thanks, Amanda! Yes, no change. Just cook it first. Enjoy!
Laurie Ballachino says
