These Paleo Sugar Cookie Bars are so easy to make and have all the same flavors as a sugar cookie. Gluten free, dairy free and naturally sweetened.
Sugar cookies are a classic that will never get old. The are simple, sweet, and topped with frosting makes them even better. Turning them into bars makes them so easy and who doesn't like a cookie bar?
I made these a couple times to make sure they were perfect and the combination of maple syrup and coconut sugar is the best. It makes them not too dark in color and the mix of sweeteners gives great flavor.
Gelatin
Grass-fed gelatin maybe seems like a strange ingredients for cookie bars, but it adds chewiness and helps the bars hold together better. You can leave it out, but I don't recommend it. It's just a little bit and makes these bars so good!
Frosting
While my daughter does not like baked goods, she LOVED the frosting and ate it off a couple of the cookie bars. We had fun making these together and I'm glad she enjoyed part of them. It's made from coconut butter, maple syrup, and a little ghee. It's so simple and perfectly sweet.
These bars are easy, delicious and I think you will love them. Chewy, perfectly sweetened and frosted. Yum!
Enjoy a little piece of sugar cookie heaven!

This looks so good! Do you use this cookie base in any other paleo recipes?
Jessica DeMay says
I haven't yet, no.
Meg says
Made these last night and while they tasted great, the texture was very dry. I think it was because I may not have mixed the “dough” well enough. I triple checked the recipe and followed everything exactly. Thoughts on why, Jessica? Thanks!
Jessica DeMay says
Hi Meg- I'm so sorry! They definitely shouldn't be dry. You just used 2 Tablespoons coconut flour? That's the only thing I can think of. It's a very dry flour and too much can dry out recipes. Thanks for trying them!
Meg says
I made these again once I realized I only used gluten free flour the first time, not almond flour (my bad). I only used one cup of gf flour (and no coconut flour) and kept everything else the same, turned out perfectly! Delicious recipe!
Jessica DeMay says
Thanks, Meg! So glad you like them!
Betty Ashworth says
This one's a keeper, Jessica!
I used real (lactose free) butter instead of ghee with no issue.
I love the icing! My husband is impressed as well! I will certainly make this again!
Jessica DeMay says
Thanks, Betty! I'm so glad you made them and love them. I appreciate the feedback 🙂

These look delicious, with the gelatine do I just put the powder in the mixture or do I have to put the gelatin in boiling water first?
Jessica DeMay says
Hi Ebony- just sprinkle the gelatin in dry with the other dry ingredients. No need to mix it with water first 🙂 Enjoy!
Leanne Jorgensen says
I have made these twice so and i love them. It does taste like a sugar cookie but also it reminds me of a maple bar.
Make it if you have the ingredients
Thank you Jessica!!!
Jessica DeMay says
You're welcome, Leanne! Thanks for trying them and so glad you like them!
Emily says
Looks great! Is the gelatin essential?
Jessica DeMay says
Hi Emily- you can leave it out but they won't be as chewy. Hope you try them!
Joy says
Too many Commercials interrupted getting recipe
Jessica DeMay says
Hi Joy- I'm sorry about that. You can exit out of those in the top right corner.
Anne says
Hi Joy! I just want to say that Jessica works hard on these recipes and deserves to get sponsored or be ad supported! I know I have made at least 12 of her recipes and have never been disappointed. These ingredients are real and thus expensive! I’m sure she product tests them multiple times before even posting it! I would recommend leaving positive reviews and not negative on her or any bloggers site if you enjoy free recipes!
Thank you for the hard work you do and the amazing recipes ❤️
Jessica DeMay says
Hi Anne- thank you so much for the kind comment. It really made my day! You are right, I do test my recipes multiple times and I rely on ad money to pay my bills. I don't have a choice but to have them on my site and I actually try to keep them as minimal as possible to keep the user experience good. I really appreciate you understanding this and the importance of leaving positive reviews on recipes. Thank you so much! <3

WOW these are amazing. Up until now I haven’t found a paleo that matched my old ways of baking. Enter these sugar cookie bars. I have had very limited sugar since September and these hit the sweet spot.
Jessica DeMay says
Thanks for trying them, Liz and I'm so glad yo like them!
Stacie says
Is there no baking soda or powder required in this recipe?
Jessica DeMay says
Hi Stacie- that's correct. Leaving those out gives them a dense, non-cakey texture. Hope you love them!
