These Easy Paleo SunButter Cookies are naturally green with no hidden veggies. With only 6 ingredients they are easy and delicious! Gluten free, dairy free, nut free, and naturally sweetened.
These cookies are so fun! SunButter naturally turns green when baking- the chlorogenic acid (chlorophyll) in the sunflower seeds reacts with the baking soda causing the green color. The color doesn't affect their taste at all so you don't have to worry about that. This makes these cookies perfect for St. Patricks Day or even Christmas and you can call them Grinch cookies.
I used to make a version of these when I was younger. Peanut butter, white sugar and an egg. A classic most people have made. I swapped out the peanut butter for SunButter and used maple syrup to sweeten them. Since the maple syrup adds some moisture, I added a little coconut flour. They came out amazing! A little crunch on the outside, and soft and chewy on the inside.
Naturally Sweetened and Nut Free
Since I'm using my favorite No Sugar Added SunButter, they are completely sweetened with maple syrup. It also makes them nut free, so I used some coconut flour instead of almond. It worked great and you only need a little. The texture of these is so perfect! They don't flatten too much and aren't cakey either.
These are just as good as the traditional version- actually better! I know you will love them! They are so easy to make. Something I felt was important. I remade these over and over until they were perfect with as few ingredients as possible. You most likely have all the ingredients already and the most time consuming part is letting the dough chill for an hour.
These are low FODMAP as long as you stick to just a couple. Coconut flour is a limit food, but everything else is approved. Enjoy!
If you really don't want them green then you can use a half the amount of baking soda. If you're looking for another green recipe, you can make this Paleo Low Carb Nut Free Bread and use baking soda and leave out the vinegar. It will turn green on the inside.

Super easy with ingredients I already had on hand!
Jessica DeMay says
Thanks for trying them, Rachel!
Sarah says
Mine fall completely apart when I take them out 🙁
Jessica DeMay says
I'm sorry about that, Sarah! Did you sub any ingredients? They are a little delicate straight from the oven, but firm up as the cool.
Megan says
I could have sworn I had maple syrup, but I don’t! What would be the best substitute??
Jessica DeMay says
Hi Megan- Honey would be the best substitute. Hope you love them!
Col says
If I don’t have sugar free sun butter, would that change the amount of maple syrup used...?
Jessica DeMay says
Hi Col- I wouldn't because then they might be too dry. They'll just be a little sweeter, but shouldn't be too sweet. Enjoy!
Kerri says
Can I use a flax egg or egg replacer for this recipe?
Jessica DeMay says
Hi Kerri- I think that would work great. Enjoy!
Emily Ribeiro says
I want to make this recipe for my daughter's classroom. Can I make in advance and freeze, or should I just plan to make morning of?
Jessica DeMay says
Hi Emily- these can definitely be made ahead and frozen. Enjoy!
Jake McGreevy says
Can almond flour be substituted? How will that affect the baking?
Jessica DeMay says
Hi Jake- you can try, but it will need more. I would use at least double the amount. Let me know if you try and how they come out.
jennifer says
after I make the cookies, I am wondering if I should store them in the fridge, or is sitting out on the counter good?
Jessica DeMay says
Hi Jennifer- they can be stored at room temperate for 1 day (24 hours) then in the fridge after that. Enjoy!
Janet says
The few times I’ve had sum butter I just wasn’t a fan. Do you think pecan butter would work?
Jessica DeMay says
Hi Janet- I do suggest trying SunButter brand as it's different than other sunflower seed butters. It's creamy and the taste is the best. But yes, you can use pecan butter if you want. It won't turn green. Hope you try them!
Janet says
Thanks. I will try that brand then. Seeds definitely sit better with me so I’d love to make it work.
Jessica DeMay says
You're welcome! I think you'll love that brand. I agree- I do better with seeds than nuts. Hope you love them!
Janet Carmichael says
Tried the brand and love the cookies. Very moist!
Jessica DeMay says
Thanks for trying them, Janet! I'm so glad you like them! 🙂
Christine says
These look delicious! I can't wait to try it this weekend. Just curious, what makes the inside turn green?
Jessica DeMay says
Thanks, Christine! In the first paragraph I talk about the chlorogenic acid in the sunflower seeds that reacts with the baking soda. It naturally turns green as it cools. Hope you try them!
Christine says
Thank you! ^_^

You're welcome!
