These Easy Paleo SunButter Cookies are naturally green with no hidden veggies. With only 6 ingredients they are easy and delicious! Gluten free, dairy free, nut free, and naturally sweetened.
These cookies are so fun! SunButter naturally turns green when baking- the chlorogenic acid (chlorophyll) in the sunflower seeds reacts with the baking soda causing the green color. The color doesn't affect their taste at all so you don't have to worry about that. This makes these cookies perfect for St. Patricks Day or even Christmas and you can call them Grinch cookies.
I used to make a version of these when I was younger. Peanut butter, white sugar and an egg. A classic most people have made. I swapped out the peanut butter for SunButter and used maple syrup to sweeten them. Since the maple syrup adds some moisture, I added a little coconut flour. They came out amazing! A little crunch on the outside, and soft and chewy on the inside.
Naturally Sweetened and Nut Free
Since I'm using my favorite No Sugar Added SunButter, they are completely sweetened with maple syrup. It also makes them nut free, so I used some coconut flour instead of almond. It worked great and you only need a little. The texture of these is so perfect! They don't flatten too much and aren't cakey either.
These are just as good as the traditional version- actually better! I know you will love them! They are so easy to make. Something I felt was important. I remade these over and over until they were perfect with as few ingredients as possible. You most likely have all the ingredients already and the most time consuming part is letting the dough chill for an hour.
These are low FODMAP as long as you stick to just a couple. Coconut flour is a limit food, but everything else is approved. Enjoy!
If you really don't want them green then you can use a half the amount of baking soda. If you're looking for another green recipe, you can make this Paleo Low Carb Nut Free Bread and use baking soda and leave out the vinegar. It will turn green on the inside.

Thanks, Elena! So glad you like them!
Jessica says
Hi Jess, do you see any problem with me refrigerating the dough for 2 days before baking?
Jessica DeMay says
Hi Jessica- I think that will work. Some of it may turn green. Maybe
Jessica says
Do you leave them on the counter or refrigerate after baking?
Jessica DeMay says
Hi Jessica- they're good at room temp for a day then should be stored in the fridge.
Jessica says
Awesome, they turned out fabulous! I always know your recipes are reliable!! Happy Holidays !
Natalie says
These cookies are absolutely delicious! The strange thing though is that after refrigerating overnight, there were definitely green smears in the mixing bowl, but the cookies weren't green inside after baking. I wonder if I refrigerated the dough for too long? I know that the baking soda is older, but it seems weird that the smears were green but the cookies weren't. They're so good though that I don't mind trying again, maybe this time only chilling for an hour.

Yummy! I used 18 tbsp almond flour instead of the 6 tbsp coconut flour and they turned out great. I love the green on the inside. My husband likes them too!
Jessica DeMay says
Thanks for trying them, Katie and so glad they were enjoyed by everyone. Thanks for the great feedback too 🙂

Made these today and they came out so good! I only had sweetened sunbutter so I cut the maple syrup by about half. I was pleasantly surprised at how green they were inside! Soft and delicious. I'll make these again.

Can I use an egg substitute?
Jessica DeMay says
Hi Sandi- yes, that will work.
AJ says
These are better than expected. I don’t like peanut butter either. My husband keeps telling me that he could eat these for breakfast every day and he doesn’t even like cookies.
Jessica DeMay says
Thanks, AJ. So glad you made them and that they are enjoyed! 🙂

Hello. I work in a school and I have 3 cases of sunbutter right now. I am only allowed whole-wheat flour, can I use that instead of coconut flour?? I want to make these for Halloween for the students. (I serve over 400 kids).
Jessica DeMay says
Hi Shannon- that should work. I would say use 3 times the amount if using whole wheat flour. Hope that helps!
Clare says
I don't have coconut flour, can I use almond flour instead? Would I need to add more or less?
Jessica DeMay says
Hi Clare- almond flour will work. Use 3 times the amount 🙂
