This Paleo Whole30 Cilantro Lime Chicken is easy, quick, and so flavorful. It’s gluten free, dairy free, low carb, and low FODMAP.
My first grilling recipe of the year and not only is it super delicious, but also super simple. It doesn’t get much better than that, right? This recipe is mainly a marinade and while I use it for chicken, I’m sure it would also be so good on pork as well.
Low FODMAP Marinade
This marinade is so simple and uses garlic oil in place of garlic. It still adds great flavor, but keeps it low FODMAP. If you don’t need it low FODMAP, then feel free to use fresh garlic or garlic powder.
Grilled food is so delicious looking! This chicken stays moist and juicy while the outside is nice and browned. You will absolutely love this chicken!
Let’s talk about the ingredients:
Cilantro– you either love it or hate it. If you hate it, then this isn’t the recipe for you 🙂 It’s the star of the recipe and adds so much freshness and flavor. Choose organic if possible.
Garlic Oil– Adds great garlic flavor while keeping it low FODMAP. Use more avocado oil if you don’t need it low FODMAP.
Avocado Oil– I love how neutral in flavor this oil is and has a high smoke point.
Lime Juice– Adds freshness and pairs with the cilantro perfectly.
Salt– Always necessary, not much explanation needed
This marinade comes together so quickly and definitely needs to be added to your summer grilling list.
Paleo Whole30 Cilantro Lime Chicken
- In a blender or food processor (I use the individual cup on my blender) combine the cilantro, oils, lime juice and salt. Blend until smooth- about 30 seconds. Pour into a glass container and add the chicken. Mix around to coat the chicken evenly. Marinate for at least 2 hours, up to over night in the fridge.
- Remove the chicken from the fridge an hour before grilling to help it cook more evenly. Grill chicken until cooked through- this will depend on thickness of the chicken and heat of the grill. It took me about 5 minutes a side for filleted chicken breast. You can also bake it or cook it on the stove top. You want the internal temperature to be 165°.
