Paleo Caramel Apple Slices

In a medium bowl, combine coconut oil, maple syrup, SunButter and vanilla. Stir until smooth.
Line a cookie sheet with wax or parchment paper. Make room in the fridge for it.
Slice the apple into ¼ inch slices. Dry each slice off and then dip fully in caramel. Place on the cookie sheet. Repeat with remaining apples until all are dipped. Place in the fridge to set.
If using chocolate, melt chocolate until smooth and then drizzle over each slice. Place back in the fridge to set.
These are best eaten within 3 days. Store in the fridge. Recipe can easily be doubled if desired.
