Oatmeal Butterscotch Bars

These Oatmeal Butterscotch Bars combine browned butter, melted butterscotch chips, and chewy oatmeal for the ultimate bar. These are sure to become your new favorite.

Ingredients

  • 1 ¼ cup flour
  • 2 cups old fashioned oats
  • ½ teaspoon salt
  • 1 cup 2 sticks butter
  • ¾ cup butterscotch chips
  • 1 cup brown sugar
  • 1 egg
  • 2 teaspoons vanilla
  • GLAZE
  • ¼ cup brown sugar
  • 2 tablespoons water
  • ½ cup butterscotch chips

Instructions

  • Preheat oven to 350° and line a 13x9 pan with foil. Grease the foil and set aside.
  • In a small bowl, combine flour, oats, and salt. Set aside.
  • Put the butterscotch chips in a large bowl.
  • Heat butter in a small saucepan over medium-low heat until nutty brown in color. About 10 minutes. You'll see a definite change- it will go from bubbling and noisy to foaming and quiet. I stir with a whisk regularly to prevent burning.
  • Pour over butterscotch chips and stir until chips are completely melted and smooth.
  • Stir in sugar and mix until dissolved.
  • Add the vanilla and the egg and mix well.
  • Stir in the flour mixture.
  • Spread into prepared pan and bake for 18-20 minutes.

Glaze

  • In a microwavable bowl or measuring cup, mix the water and brown sugar.
  • Microwave for 30-60 seconds or until it starts to just boil.
  • Add the butterscotch chips and stir until completely smooth.
  • Pour over warm bars.
  • Let fully cool before cutting- at least 2 hours, overnight if possible.
  • Remove bars using the foil and cut into squares.
