Paleo Whole30 Cilantro Lime Chicken

- ¾ cup fresh cilantro
- 2 tablespoons garlic oil
- 2 tablespoons avocado oil
- 2 limes juiced (3-4 tablespoons)
- 1 teaspoon salt
- 1-1.5 pounds chicken
In a blender or food processor (I use the individual cup on my blender) combine the cilantro, oils, lime juice and salt. Blend until smooth- about 30 seconds. Pour into a glass container and add the chicken. Mix around to coat the chicken evenly. Marinate for at least 2 hours, up to over night in the fridge.
Remove the chicken from the fridge an hour before grilling to help it cook more evenly. Grill chicken until cooked through- this will depend on thickness of the chicken and heat of the grill. It took me about 5 minutes a side for filleted chicken breast. You can also bake it or cook it on the stove top. You want the internal temperature to be 165°.
