Paleo Coconut Cashew Bites

Servings: 15 bites


  • 1 cup dates
  • 1 cup unsweetened shredded coconut
  • 1 cup cashews raw or dry roasted
  • 1/4 teaspoon salt if needed
  • 1-2 tablespoons water if needed
  • 1/4 cup finely shredded unsweetened coconut (optional)


  • Add the dates, coconut, cashews and salt to food processor and blend until combined and a dough is formed. Add water as needed and process until the mixture is even in texture, but not too wet.
  • Roll into 1 tablespoon balls, making 15. Roll in more coconut if desired. Store covered in the fridge.


*If using dry roasted cashews then you won't need salt. If you're using raw then you'll need the salt
