Paleo Whole30 Homemade Italian Sausage

For Patties

  • Preheat oven to 375° and line a baking sheet with parchment paper. Set aside. 
  • In a large bowl, combine pork, garlic oil, italian seasoning, parsley, red pepper flakes, paprika, salt, pepper, and fennel seed. Mix well until all the seasonings are evenly incorporated. Divide into 16 even patties, making them the same thickness, about ⅓ inch thick. Bake for 15 minutes. 

For Ground

  • In a large skillet, cook pork in the garlic oil over medium heat until mostly cooked through, 5-7 minutes. Drain fat if needed, a little fat is fine. Add in the italian seasoning, parsley, red pepper flakes, paprika, salt, pepper, and fennel seed and mix well. Cook for another couple minutes until well combined. Take off heat and use as desired.

*Use 1 teaspoon garlic powder if not needing it low fodmap
