Paleo Pesto

Ingredients

  • 1/2 cup shelled pistachios
  • 1 cup backed basil
  • 3 cups packed baby spinach
  • 1/2 cup light olive oil or avocado oil
  • juice of half a lemon
  • 1/2 teaspoon salt
  • pepper to taste

Instructions

  • Place all ingredients in blender or food processor and blend until smooth.
  • Taste and adjust salt if needed.
  • Store in refrigerator
  • Makes 1 1/2 cups
