  • 1.5 pounds cooked chicken, cut up into bite size pieces
  • 2/3 cup paleo mayo
  • 1/2 cup paleo pesto
  • grape tomatoes, halved (optional)


  • Add the chicken to a large bowl and add the mayo and pesto. Stir well. Add in grape tomatoes if desired. 
  • Serve on lettuce or out of a bowl. Store covered in the fridge. 


-If you don't want to use homemade mayo, Primal Kitchens is a great option. 
-If you don't need it to be low fodmap then use your favorite pesto
