This Paleo Whole30 Pesto Chicken Salad is an easy and delicious meal that is healthy and filling. Just 3 simple ingredients combined to make a flavorful meal. Gluten free, dairy free, low fodmap, and low carb.
I just posted this Paleo Whole30 Basil Pesto that is low fodmap and has been made regularly in our house the last few months. It's dairy free, made in just minutes and this is one of my favorite ways to use it. Mix it with some mayo, chopped chicken and you have this quick and delicious meal.
It's summer and I am always looking for meals that are quick and won't heat up the house. Chicken salads are a must and I love that they are eaten cold. I'll make a big batch and eat it all week. They even seem to get better the next day as the flavors blend together.
The recipe calls for 1 ½ pounds of chicken- what kind of chicken is up to you. I've used cut up breasts, thighs, and a whole rotisserie chicken. The rotisserie chicken is my favorite not only because it's the easiest, but the meat seems to kind of soak in the pesto mixture the best. Just make sure if you go that route that the chicken has clean ingredients- most don't.
This can be made into a salad, served straight from the bowl, or made into a lettuce wrap. I love the addition of tomatoes because pesto and tomatoes are so good together, but they are optional.
Mayo Options
For the mayo you can use homemade or a high quality store bought one. Homemade is of course cheaper, but sometimes going the convenient route is worth it! I always get Primal Kitchens Mayo because there is no added sugar and it's Whole30 approved. Here is my homemade recipe that is super easy and quick.
You will love this salad because it is creamy, packed with flavor, and so easy to make! I already have plans to make it again.

Paleo Pesto Chicken Salad
Ingredients
- 1.5 pounds cooked chicken, cut up into bite size pieces
- ⅔ cup paleo mayo
- ½ cup paleo pesto
- grape tomatoes, halved (optional)
Instructions
- Add the chicken to a large bowl and add the mayo and pesto. Stir well. Add in grape tomatoes if desired.
- Serve on lettuce or out of a bowl. Store covered in the fridge.
