This Paleo Chicken Salad is easy, packed with fresh flavor, and so delicious! A great healthy no-cook meal for summer!
I'm excited to share this delightful recipe that combines tender chunks of chicken with crisp apples and juicy grapes for a burst of flavor in every bite.
Ingredients for chicken salad
My paleo mayo is the base that adds creaminess and holds it all together. Store bought, like Primal Kitchens Mayo or Sir Kensingtons Mayo will also work great.
Cooked chicken- start with cooked chicken breast, ensuring each mouthful is packed with protein and satisfying texture. Leftover baked chicken or a store bought chicken both work great.
Grapes and apples- there is a generous helping of diced apples, providing a sweet and crunchy contrast that complements the savory chicken perfect. Toss in halved grapes, their juicy bursts of sweetness adding a refreshing element to the salad.
Green onions are used because they are mild, but if you love onion then feel free to replace them with some diced red or sweet onion.
Serving chicken salad
This can be served over lettuce or a paleo tortilla to keep it fully paleo. If you can have gluten free grains then serve it on some gluten free bread.
You will love this chicken salad because it is easy, tasty, and the perfect balance of flavors. It is not only delicious but also nutritious, with the natural sweetness of apples and grapes adding a delightful twist to this classic dish.

This was so good! I made it to take for work lunches and it was perfect over some romaine lettuce. I used a store-bought Whole30 compliant mayo to save some time/ingredients.
Samantha says
How many servings would you say this makes? So that I can track the macros?
Jessica DeMay says
Hi Samantha- that's really an individual thing. Maybe 6-8?

Do you think this is fodmap friendly? And by the way, thank you for all of the low fodmap recipes! They are greatly appreciated!!
Jessica DeMay says
Hi Tia- no, because of the apples and grapes. Here is a low FODMAP one:https://www.realfoodwithjessica.com/2017/06/12/paleo-whole30-berry-chicken-salad/
Thanks! I'm so glad you enjoy those recipes.

I’ve done the whole30 5 times and this is my favorite thing to make for lunch. I’m always incredibly satisfied. Homemade mayo on a bed of lettuce ??

Thanks, Allyson! So glad you like it!
Wilhelmina Giese says
HI! How many servings does one batch make? I need to make enough for about 15 people, thanks!
Jessica DeMay says
Hi Wilhelmina- I would say it's about 6 servings, so maybe triple it so there are leftovers. I think that would be safe. Hope you love it!
