These Oatmeal Butterscotch Bars combine browned butter, melted butterscotch chips, and chewy oatmeal for the ultimate bar. They are sure to become your new favorite.
Dang- these bars are seriously delicious! Oatmeal Scotchies are one of my absolute favorite cookies and these have all the same textures and flavors. Dare I say I even like them better? Crazy! When you bite into it, the butterscotch topping melts in your mouth then you’re hit with the chewiness of the oatmeal. The depth of the browned butter comes through and what you may think is just a simple oatmeal bar is anything but!
These come together quickly. Okay…so it takes a LITTLE extra time to brown the butter, but it’s only about 10 minutes and its so worth it. Comparing that to chilling the dough and individually scooping them out, which is the way the cookies are made, they’re a breeze. So this is only the second time I’ve browned butter- I’m a little late to that party! It’s so simple though so don’t be intimidated if you’ve never done it. It adds a toasty, buttery, carmely, deep flavor. You don’t want to skip it.
I was a little concerned they’d be greasy with two sticks of butter, but they’re totally not. Rich? Yes! Greasy? Not at all!
The recipe is from Cook’s Country. It’s a cookbook of their annual recipes and it’s pretty much my favorite cookbook ever. I know, total nerd, but I love how they explain why they do every step. I only changed a couple things- I left the baking soda out because I didn’t want any rise to the bars and I doubled the topping. The result is a dense, extra glazed bar- absolutely delicious!

Oatmeal Butterscotch Bars
Ingredients
- 1 1/4 cup flour
- 2 cups old fashioned oats
- 1/2 teaspoon salt
- 1 cup 2 sticks butter
- 3/4 cup butterscotch chips
- 1 cup brown sugar
- 1 egg
- 2 teaspoons vanilla
- GLAZE
- 1/4 cup brown sugar
- 2 tablespoons water
- 1/2 cup butterscotch chips
Instructions
- Preheat oven to 350° and line a 13×9 pan with foil. Grease the foil and set aside.
- In a small bowl, combine flour, oats, and salt. Set aside.
- Put the butterscotch chips in a large bowl.
- Heat butter in a small saucepan over medium-low heat until nutty brown in color. About 10 minutes. You’ll see a definite change- it will go from bubbling and noisy to foaming and quiet. I stir with a whisk regularly to prevent burning.
- Pour over butterscotch chips and stir until chips are completely melted and smooth.
- Stir in sugar and mix until dissolved.
- Add the vanilla and the egg and mix well.
- Stir in the flour mixture.
- Spread into prepared pan and bake for 18-20 minutes.
Glaze
- In a microwavable bowl or measuring cup, mix the water and brown sugar.
- Microwave for 30-60 seconds or until it starts to just boil.
- Add the butterscotch chips and stir until completely smooth.
- Pour over warm bars.
- Let fully cool before cutting- at least 2 hours, overnight if possible.
- Remove bars using the foil and cut into squares.
