This Paleo Meatloaf has so much flavor and is super simple to make. Classic comfort food made healthier. Gluten free, dairy free, and Whole30.
I am a total meatloaf lover! I'm not sure why it gets such a bad rep. Maybe people are making it super bland and dry- that's my guess. Well, that's not what you'll get with this meatloaf. It is moist, flavorful, and even has a hidden veggies! You won't miss the bread crumbs or artificially ingredients.
Here's the ingredients you'll need. If you couldn't tell by now, I love those coconut aminos. I used to use Worcestershire sauce in meatloaf and that takes the place of it now.
Since it's a pretty big loaf, it takes about an hour and a half to fully cook. I'm thinking you could make mini loafs or muffins with it to cut down on cooking time. I highly recommend a meat thermometer to temp it towards the end. You want it between 160°-165°. It will continue to cook a little after you take it out. Here's the one I have. I've had it for 4 years and use it all the time.
Speaking of meat thermometers- my husband was pretty sick a few weeks ago and stayed home from work. I called him on my way home to see how he was feeling and he told me he was concerned he had a fever, but he wasn't sure because the meat thermometer didn't give an accurate reading. Yes, you read that right. He tried taking his temperature with a meat thermometer!! I had a pretty good laugh. Needless to say, I stopped at Target on the way home to pick him up a real, human thermometer.
This Paleo Meatloaf is the perfectly savory with a touch of sweetness. I caramelize the onions, which is an optional step, but adds great depth of flavor. You will love it because it's tasty, healthy, and easy. Great served over cauliflower rice or mash.

Paleo Meatloaf
Ingredients
- 2 pounds ground beef
- 1 large onion, diced
- 1 cup cooked sweet potato
- 1 cup almond flour
- 2 tablespoons coconut flour
- 1 large egg, room temp is best
- 1 cup Paleo ketchup
- 3 tablespoons coconut aminos
- 2 teaspoons salt
- 1 teaspoon garlic powder
Glaze
- ½ cup paleo ketchup
- 2 tablespoons coconut aminos
- 1 tablespoon honey leave out for Whole30
Instructions
- Preheat the oven to 350° and line a cookie sheet or roasting pan with a piece of parchment paper.
- This is an optional step: Place diced onion and a little coconut oil in a pan and sauté until softened and translucent. About 5-7min.
- In a large bowl, mix beef, onion, sweet potato, almond flour, coconut flour, egg, ketchup, coconut aminos, salt, and garlic powder together. I find the best way to do this is with my hands. Mix until just combined- don't overtax or it can become tough.
- Form into a loaf shape and place in pan.
- Mix glaze ingredients in a small bowl and scoop on top of meatloaf.
- Bake for 60 minutes and remove from oven. Carefully scoop out all grease into a jar or bowl.
- Place back in oven for 30 min or until a thermometer reads 160°-165°.

This turned out great! Delicious recipe for comfort food. I used a meat loaf pan to cook it in and it worked well. The sweet potato was a tasty addition.

This was sooo good! My 2 young kids wanted more. It was the 1st thing on their plates that was gone. They didn't notice the sweet potatoes either until I told them but they continued to eat it even after I told them.

Two words for this inclusion of Sweet Pot in the meatloaf: Brill Iant!!
What a great idea.
I also layered some (cooked) sweet pot in the loaf pan before adding the turkey mixture, and some atop. Ground turkey really needs some oomph, and this did it.
I also sautéed abt 6 cloves minced garlic and included.

This is soooo delicious. I've been trying to go Paleo lately and I thought I'd give this recipe a go; Mom loved it too. One problem is it crumbles apart when I go to slice it and I can't figure out what I did wrong. 🙁 Not that food really needs to be aesthetically pleasing but it'd be easier to portion and a little less embarrassing on my end, haha.

Ive made this like 20 times. It is my FAVORITE!!! And the other recipes by this amazing cook are awesome too. Really good stuff. Keep up the good work! Also, this meatloaf is huge. I am 1 person..I can eat it for 4 or 5 nights and then also freeze a couple servings. Oh also...I flatten it in a casserole dish so it is less of a mountain and more like a fat, flat rectangle.

A friend of mine shared this meatloaf recipe with me a few months ago and it was such a big hit it's in our regular lineup! My only challenge is that I can't seem to make one that holds together, it ends up being more of a meat hash than a meat loaf. I plan to try it with more flour but I'm nervous about that because the flavor is spot on and it feels like the flour would change that. I'd appreciate any suggestions you have!

Have you tried this in an Instant Pot? It got much hotter today than expected, & I’d rather not heat up the oven if there’s an alternative. Thank you for the delicious recipes! This is my 1st time making the meatloaf, but my husband is a convert to your homemade ketchup, & has loved everything else I’ve made from your recipes.

Hi Shelley- I haven't, but I think that would work great. I definitely understand not wanting to heat the house up! The only concern is that it's too big. Maybe half it or make it in two batches. Make a little tin foil boat to hold the meatloaf and cook for 30 minutes. I hope that helps! I'm so glad your husband likes the ketchup- I think you guys will like this meatloaf!
