This Paleo Meatloaf has so much flavor and is super simple to make. Classic comfort food made healthier. Gluten free, dairy free, and Whole30.
I am a total meatloaf lover! I'm not sure why it gets such a bad rep. Maybe people are making it super bland and dry- that's my guess. Well, that's not what you'll get with this meatloaf. It is moist, flavorful, and even has a hidden veggies! You won't miss the bread crumbs or artificially ingredients.
Here's the ingredients you'll need. If you couldn't tell by now, I love those coconut aminos. I used to use Worcestershire sauce in meatloaf and that takes the place of it now.
Since it's a pretty big loaf, it takes about an hour and a half to fully cook. I'm thinking you could make mini loafs or muffins with it to cut down on cooking time. I highly recommend a meat thermometer to temp it towards the end. You want it between 160°-165°. It will continue to cook a little after you take it out. Here's the one I have. I've had it for 4 years and use it all the time.
Speaking of meat thermometers- my husband was pretty sick a few weeks ago and stayed home from work. I called him on my way home to see how he was feeling and he told me he was concerned he had a fever, but he wasn't sure because the meat thermometer didn't give an accurate reading. Yes, you read that right. He tried taking his temperature with a meat thermometer!! I had a pretty good laugh. Needless to say, I stopped at Target on the way home to pick him up a real, human thermometer.
This Paleo Meatloaf is the perfectly savory with a touch of sweetness. I caramelize the onions, which is an optional step, but adds great depth of flavor. You will love it because it's tasty, healthy, and easy. Great served over cauliflower rice or mash.

Paleo Meatloaf
Ingredients
- 2 pounds ground beef
- 1 large onion, diced
- 1 cup cooked sweet potato
- 1 cup almond flour
- 2 tablespoons coconut flour
- 1 large egg, room temp is best
- 1 cup Paleo ketchup
- 3 tablespoons coconut aminos
- 2 teaspoons salt
- 1 teaspoon garlic powder
Glaze
- ½ cup paleo ketchup
- 2 tablespoons coconut aminos
- 1 tablespoon honey leave out for Whole30
Instructions
- Preheat the oven to 350° and line a cookie sheet or roasting pan with a piece of parchment paper.
- This is an optional step: Place diced onion and a little coconut oil in a pan and sauté until softened and translucent. About 5-7min.
- In a large bowl, mix beef, onion, sweet potato, almond flour, coconut flour, egg, ketchup, coconut aminos, salt, and garlic powder together. I find the best way to do this is with my hands. Mix until just combined- don't overtax or it can become tough.
- Form into a loaf shape and place in pan.
- Mix glaze ingredients in a small bowl and scoop on top of meatloaf.
- Bake for 60 minutes and remove from oven. Carefully scoop out all grease into a jar or bowl.
- Place back in oven for 30 min or until a thermometer reads 160°-165°.

I made this tonight with the paleo ketchup recipe as well and WOW! Awesome! It did fall apart a little, but still tasted great so who cares. I guess next time I'll try an extra egg.
I followed the ketchup recipe except I used honey instead of the dates in the ketchup and I used smoked paprika but left the cayenne out.
Thanks for the great recipe. I'll definitely be making this again.

Hi! Love the flavor of this but I've mad it twice, following your recipe and each time it crumbles. Thoughts or tips to make it hold together?
Jessica DeMay says
Hi Lauren- thanks for trying my recipe! I'm not sure why it's crumbling if you followed the recipe, but try adding another egg next time. That should help bind it together more. Hope that helps!

Probably one of the best, if not the best meatloaf recipes I have tried- my wife made it and we both agreed it was a hit. Great job!! I miss sriracha so I alter the Whole 30 ketchup recipe a bit by adding roasted red peppers for mild, or a few fresh ground cayenne peppers for spice. Works great on this meatloaf recipe! Fan of your site and please keep us going with fresh recipes!! Thank you!

LaLa says
Should the sweet potato be diced? Puréed? How does it get added? Thanks!!!
Jessica DeMay says
Hi Lala- it should be mashed. Hope you like it!

This recipe is SO good- and I'm not a big meatloaf fan! Even my husband loves it, and I'm a happy camper because it's healthy! Ha! Do you have any tips on prepping it in advance? I would love to just throw it in the oven when I get home.
Jessica DeMay says
Thank you, Jessica! I think you could totally make it up to the baking part and keep it refrigerated then bake it when you get home. You could even make it into 2 smaller loaves so they bake faster. Thanks for the great feedback 🙂

My husband and I have been paleo since Jan 2013 and we cook paleo dinners 3 times a week including lunches and breakfasts. I own all the big paleo cookbooks but we stick to our tried and true standards. Your meatloaf recipe is literally the first recipe we've tried where I cannot stop saying how amazing it is - it is so delicious, so nolstalgic and better than any other meatloaf I've made or tried. I love it so much so that this is my first ever online rating of a recipe I've tried. My husband said he'd be willing to eat this recipe every week, and I agreed. It's that good.

Thank you for the great feedback, Kathleen! I'm so glad to hear that you and your husband like my meatloaf 🙂 Thank you so much for the kind words!!

This was awesome! I did it in a muffin tin and filled, slightly overflowing, 14 muffin cups. 350 degrees for 40 minutes. It was great! Had a bit more sweet potato than the recipe called for but it held together and was so moist!
Jessica DeMay says
Thanks for trying my recipe, Melissa! I love that you made it in a muffin tin- I'm going to do that next time 🙂
