These Mini Skillet Brownies is such a great quick dessert perfectly portioned for 2 people. Rich, sweet, and healthy! Nut free, gluten free, dairy free, and naturally sweetened.
These individual brownies are so fun, the ingredients are so simple and you probably have them on hand already. They mix up quick and bake for only 10 minutes. Really, in about 15 minutes total, you have a chocolatey dessert. So easy!
Ingredients for Mini Brownie Skillets
Sunflower butter- this is the base of the brownies, also making them nut free.
Maple syrup- this gives the brownies sweetness and moisture.
Egg- this helps hold the brownies together. I do think a flax egg would work well here.
Cacao powder- just a little is needed to give it perfect chocolate flavor.
Coconut flour- using this keeps the brownies nut free and just a little is used so they don't come out dry.
Substitutions
If you don't need them nut free, then any nut butter would work great! In place of an egg, a flax egg could be used to make these vegan. Another type of flour can be used, but about 3 times as much will be needed as coconut flour is unique and only a little is needed.
These are the cute little cast iron pans I used that are super affordable. I actually thought they would be a pain to cook and clean, but the brownies didn't stick at all and they cleaned right up. If you don't want to buy the pans, you can double the recipe and bake it in a 9x9 pan.
Low FODMAP Dessert
There are a lot of low FODMAP meals on my site, but not a lot of desserts becuase they can be a little more tricky to make. Using only maple syrup which is a low FODMAP sweetener, coconut flour is okay in small amounts (like this) and No Sugar Added SunButter is low FODMAP as well.

Mini Brownie Skillets
Ingredients
- ½ cup No Sugar Added SunButter
- ¼ cup maple syrup
- ¼ teaspoon salt
- 1 teaspoon vanilla
- 1 large egg
- 2 tablespoons cacao powder, sifted
- 2 tablespoons coconut flour
Instructions
- Preheat oven to 350° and grease two 6.5 inch cast iron skillets with coconut oil.
- In a medium bowl, combine SunButter, maple syrup, salt, vanilla and egg. Stir well. Add in cacao powder and coconut flour and stir to combine. Divide the mixture evenly between to two pans and spread out evenly.
- Bake for 10 minutes. Be careful if serving right away as the pans will be hot.
