These Paleo Vegan Birthday Cake Bites are easy to make and so delicious. No-bake, ready in minutes and gluten free, dairy free and naturally sweetened.
These little no-bake balls have the best texture! It's like biting into a ball of cookie dough and they taste just like birthday cake. They are soft, sweet, and such a good treat.
Ingredients
Just a handful of ingredients are needed and these are mixed together by hand which is quick and easy.
Cashew Butter- Georgia Grinders in my favorite. Cashew butter gives these richness without the nut butter being too overpowering. You can sub another nut butter, but the flavor will be different. My favorite cashew butter is Georgia Grinders and you can use code Jessica20 for a 20% off on their site.
Maple Syrup- this sweetener is mild and gives just the right sweetness. Honey may work, but is stronger in flavor (and they wouldn't be vegan anymore).
Almond Extract- these may seem like a weird ingredient, but it really gives it that cake batter taste. Use ½-1 teaspoon depending on your taste preference.
Almond and Coconut Flour- these 2 grain free flours give the best texture, like cookie dough.
Natural Sprinkles- try to find sprinkles that are naturally colored and don't contain soy. I used Color Kitchen sprinkles and they do have cornstarch in them which means they aren't strict paleo, but they were the best I could find.
Date Free
I love using dates for little bites like these, but I know some people don’t like dates or can’t tolerate them. These are sweetened with maple syrup and are held together with that and the cashew butter. And because they are date free it means they are just mixed up in a bowl, not a food processor.

Paleo Vegan Birthday Cake Bites
Ingredients
- ⅓ cup cashew butter
- ⅓ cup maple syrup
- ½-1 teaspoon almond extract
- ¼ teaspoon salt
- 1 ½ cups almond flour
- 1 tablespoon coconut flour
- 1 ½ TB natural sprinkles
Instructions
- In a medium bowl combine the cashew butter, maple syrup, almond extract and salt. Stir well. Add in the almond flour and coconut flour and stir until dough is formed. Stir in the sprinkles.
- Scoop into 1 inch balls and roll between palms to make smooth. Place in a glass container. Will make 16 bites. Cover and keep stored in the fridge up to 10 days.

I made these and put chocolate chips (chopped up) instead of sprinkles and vanilla instead of almond extract. Then my daughter said it was like cookie dough, so I added a little baking soda to make it more like cookie dough. They aren't birthday cake or strictly paleo anymore, but good enough for me 😉 I really like your recipes, thanks for making them available!
