These Brown Butter Rice Crispy Treats are simple to make, have only 3 ingredients and are ready in 20 minutes. Gluten free with a dairy free option!
Gluten Free Rice Crispy Treats
It's really important that if you want these to be gluten free, don't use name brand Rice Krispies as those are not gluten free. I use Aldi Crispy Rice Cereal that is gluten free, but there is also Nature's Path Crispy Rice Cereal that is gluten free. Just check the box and make sure it's gluten free.
Ingredients for Brown Butter Rice Crispy Treats
Butter or butter substitute- salted butter, either regular or vegan work. This is a key ingredient and can't be substituted. If using vegan butter, use the sticks, not the tub. More on how to brown the butter below.
Marshmallows- the ooey gooey base that holds this treat together. One 10oz bag is used making it super simple. No measuring needed.
Crispy Rice Cereal- 5 cups are used which is the perfect amount to not make the treats too dry. Make sure to check your cereal to be sure it's gluten free.
Browning Butter
This may seem hard or fancy, but it's so simple and quick and adds amazing flavor. Heat butter in a small saucepan over medium-low heat until nutty and brown in color. About 4 ½-5 minutes. You'll see a definite change- it will go from bubbling and noisy to foaming and quiet. As soon as it goes quiet, take it off the heat. I stir with a whisk regularly to prevent burning. It doesn't get quite as toasty with the vegan butter, but still does all the other steps.
Storing Crispy Treats
These are best stored covered at room temperature for up to 2 weeks. I like to keep them in a baggie to just grab to pack in a lunch, but if not packing then just covered works great.

Brown Butter Rice Crispy Treats
Ingredients
- 1 cup salted butter or vegan butter
- 1 10oz bag mini marshmallows
- 5 cups gluten free crispy rice cereal
Instructions
- Line a 9x9 square pan with parchment paper and set aside.
- Measure the crispy rice cereal into a large bowl.
- Heat butter in a large pot over medium-low heat until nutty brown in color. About 4 ½ to 5 minutes. You'll see a definite change- it will go from bubbling and noisy to foaming and quiet. As soon as it goes quiet, take it off the heat. I stir with a whisk regularly to prevent burning. As soon as it goes quiet, add the marshmallows and stir until fully combined. You want to make sure the butter and marshmallow are mixed and there is no extra butter left over.
- Once mixture is smooth, pour over the rice crispies and mix until evenly coated. Pour into prepare pan and let cool for about an hour. Cut into squares and serve.
