These Paleo Pizza Potato Skins have all the flavor of pizza, but packed into a scooped out potato! Perfect as an appetizer or a meal. Whole30, gluten free, and so delicious!
I've always loved potato skins, so why not make them better and stuff them with pizza toppings? Using Italian Sausage really gives them that pizza flavor and is highly reccommened not to skip!
Making pizza potato skins
Here are pictures of the steps. Pizza sauce, sausage and mushrooms, then garlic and olives. Then I sprinkled a little pizza seasoning on them, which is optional but adds that additional pizza flavor, then topped them with pepperoni.
I packed these taters with all the good stuff! Italian sausage, roasted garlic, mushrooms, black olives, and topped with pepperoni that gets crispy. Each bite is so good! The great thing about these is that you can use your favorite pizza toppings. Maybe you love green peppers, or ham, or bacon- add it.
Best way to scoop
One super helpful tip is to use a cookie scoop to scoop the potato out. I tried just using a big spoon and it was a mess and uneven. Using the scoop makes it easy, removes the insides evenly and makes it perfect for filling.
Ranch for dipping if you want
They are delicious on their own, but of course good dipped in ranch as well. I was always a lover of pizza dipped in ranch and this is reminiscent of that. I have a great Whole30 Ranch or you can use Tessemae's, which is what is pictured here. It's also Whole30 and convenient when I don't have time to make it from scratch.
If you haven't noticed- I love making pizza-inspired dishes. You guys love them, too! There's my Pizza Soup, Pizza Chicken, and Pizza Quiche, that are all Paleo and Whole30.
If you love pizza then you will absolutely love these potato skins!

Pizza Potato Skins
Ingredients
- 4 russet potatoes
- 8 tablespoons pizza sauce
- 1 pound ground Italian sausage, cooked
- 30 slices pepperoni
- Black olives optional
- 8 oz sautéed mushrooms optional
- Roasted garlic optional
- Pizza seasoning like Frontier Co-op or Oregano
- any other favorite pizza topping
Instructions
- Preheat oven to 400° and line a sheet tray with parchment paper.
- Wash and poke holes in the potatoes, brush with coconut oil and bake for about 40 minutes or until tender.
- Let cool for about 10 minutes, then cut the potatoes in half and scoop out most of the inside. A cookie scoop works best for this. It removes the filling without ruining the skin.
- Brush both sides with coconut oil again and bake face down on the sheet tray for 7 minutes.
- Turn over and bake 5 minutes.
- Fill with sauce, sausage, mushrooms, olives, garlic, and pepperoni. Sprinkle some pizza seasoning or oregano on before the pepperoni if desired.
- Bake for 10-12 minutes, or until pepperoni is crispy. Serve hot.
Bri says
Hi,
I am making these for dinner. I have four hungry boys to feed. How much does this recipe serve? Should I double the recipe.
Jessica DeMay says
Hi Bri- I'm sorry! I hope it's not too late. It makes 8 halves that are pretty hearty, but you may want to double it just to be sure. Better to have leftovers than run out. Hope everyone loves them!
Lisa says
Do you think these would be good made with sweet potatoes vs white?
Jessica DeMay says
Hi Lisa- I definitely think that would work. I hope you try them!
Donald says
Looks great and looking forward to trying this on the journey to a complete paleo diet (doctor's orders). Question: can you add cheese to this? (Paleo-newb, forgive my ignorance).
Thanks
Jessica DeMay says
Hi Donald- I think you'll love these. You can add cheese, but it's usually not considered paleo. If your doctor is ordering you follow that, it may be good to eliminate dairy until you figure out if you have a sensitivity. If you tolerate it ok, then yes, add it.

I can't wait to try these. DO you have a recipe for the dip?
Jessica DeMay says
Hi Jennifer- here is my paleo ranch: https://www.jaysbakingmecrazy.com/2016/01/18/paleo-whole30-ranch/
I hope you enjoy the potato skins.

Was going to try to make these ahead to take to work as one of my whole30 lunches, but I was just double checking what a serving size is considered as I couldn't find this info. I was figuring just one potato, giving me another meal for later in week...?
Jessica DeMay says
Hi Michelle- I didn't give a serving size because it's kind of up to you. If you really stuff them full of sausage and veggies then 1 may be enough. But if you don't fill them as full or maybe are more hungry that day, it might be two. I hope that helps and I hope you love them!
Nicole says
What is the serving size on this? Im assuming one potato? Thanks!
Jessica DeMay says
Hi Nicole- it depends if you're serving them for a meal or appetizer. Yes, I'd say 1 potato is a serving. Hope you enjoy!
Mandy Peachee says
What do I do with the filling I am removing? Did I miss that part? LOL I can't be wasting a potato here girl...
Jessica DeMay says
Hi Mandy- ha! There was definitely no potato wasted! 😉 I just mashed it up with some ghee and ate it- simple.
April S says
How many is a serving? Also, how many links of sausage did you use? Thanks for sharing. Looks wonderful.
Jessica DeMay says
Hi April- I would say 1-2 is a serving, depending on how full they are and who is eating them 😉 It's super easy to make more if needed. Oh, I'm sorry! It's 1 pound of sausage links which was 4 in my case. I hope that helps. Enjoy!
Michele says
Made these tonight, my family says it's a keeper! Thanks for sharing!

You're welcome, Michele! Thank you for trying my recipe and for the great feedback!

Do you have the nutritional information on this dish?
Jessica DeMay says
Hi Emma- no, I do not. There are many places online you can calculate that if needed. Thanks!
