This Easy Paleo Chili is delicious, but quick to make. The perfect weeknight meal! Common ingredients come together to create a flavorful dish that is also Whole30 compliant.
I love chili, but I don't always want to spend a lot of time dicing up lots of peppers or adding a long list of different spices. Sometimes I just want a simple, easy, no hassle meal and that's why I came up with this recipe. It's so quick, but it still has so much flavor. The only chopping is an onion and if you're really not feeling it, you can always buy it pre-chopped. I've done that plenty of times!
The ingredients are simple and you probably have them all on hand. I like using fire roasted tomatoes because I think it adds a nice smokey flavor to it. It gives it that cooked-all-day flavor even when you don't have the time to actually cook it all day. This is not a spicy chili, but you could definitely add some cayenne pepper for some heat.
I served this on zucchini noodles which is super good, but it's also awesome on baked fries. Chili fries- yum!!
You will love how fast this easy paleo chili can be made and how delicious it is. Top it with whatever you like- tomatoes, onion, or cheese. This is a great dinner that everyone will love. Here are some more chili recipes to try:

This chili is great! The flavor is full and robust, yet, much easier and quicker than the others I have made. And the addition of the zoodles was very tasty, and did not diminish the taste of the chili in any way. This one's a winner, and is the one I'll be making from now on!

Thanks for trying my recipe, Susan! I'm so glad you like it and will make it again!

This looks good and one in my family doesn't like beans. Can you clarify the fire roasted tomatoes? Is it one small can diced and one large can crushed?
Thanks!
Jessica DeMay says
Hi Aimee- I'm sorry it doesn't specify. I'll write that in. Yes, the larger can is crushed and the smaller can diced. I use Muir Glen brand. I hope you enjoy this chili!

Jessica I love how you served this chili over the zucchini noodles! It looks so good! Wonder if I could trick my husband and tell him its just healthy spaghetti?! If I put enough chili on it he may never notice!
Jessica DeMay says
Thanks Mary Ann!! Thanks- I've always loved chili on spaghetti so I thought it worked well. Haha- maybe if you pile the chili high and peel the zucchini first so he doesn't notice any green 😉
