This Paleo Three Meat Chili is packed with flavor! Sausage, bacon, and beef combine to make a hearty and delicious meal. Gluten free, dairy free and sure to become a family favorite.
You can never have too many chili recipes, am I right? I have this Easy Paleo Chili that is super popular and this Paleo Chili Cornbread Pie. Both are good for their own reasons and this one is very different.
Instant Pot and Stove-Top Instructions
I made this in the Instant Pot and on the stove-top so both instructions are included. I of course love the Instant Pot and always will choose that method, but I know not everyone owns one and this is too good of a recipe to not make.
This chili is obviously full of flavor. The slight smokiness from the bacon, all the spice from the sausage, and then the chili powder to round it all out. I choose a mild sausage, but you could even use a spicy one for more heat. As-is, it's very family friendly.
Whole30 Chili
If you need this to be Whole30 compliant, then make sure to read the ingredients on the sausage and bacon. Look for no added sugar. Otherwise, use whatever sausage and bacon you have on hand.
Beanless Chili
This bean-free chili has all of the heartiness and flavor of bean chili, with none of the unwanted discomfort and side effects 😉 It is great by itself, but feel free to serve it with some zucchini noodles or over a white or sweet potato. So many options! If you don't need it paleo then serve it with rice, chips or pasta.
If you are looking for a comforting meal that everyone will love, then this paleo three meat chili is it! Hearty, flavorful, and so delicious! Also check out my Paleo White Chicken Chili and Paleo Chicken Chili Relleno Soup.

Made this tonight for day 2 of whole30 and it did not disappoint! I did the stove top method. My husband LOVED it, as did I. Very filling and satisfying and delicious! And the best part is there are leftovers for lunches for the next couple days. Thanks for the recipe!

You're welcome, Mallory! Thanks for trying it and I'm so glad you both liked it!
Laura says
Do you drain the fat after cooking the bacon or leave it all in there?
Jessica DeMay says
Hi Laura- I left it, but you can definitely drain it if you want. I hope you like it!
Ragna says
This is probably the best chili I ever made. My family thought so too!
Jessica DeMay says
Thank you, Ragna! I'm so glad you and your family enjoyed it!
Jess says
Hi there! What kind of bacon did you use in terms of animal? Would you recommend trying chicken or turkey bacon here? Thank you!!
Jessica DeMay says
Hi Jess- I use pork bacon. Turkey bacon usually has more salt and preservatives- I don't recommend it. Look for a bacon with only pork, salt, and celery powder. Applegate no sugar added is a great one. Hope that helps!
