This Paleo Chicken Breakfast Sausage is packed with flavor and is made in just a few minutes. It’s easy, healthy and so delicious! It will become a breakfast staple.
One of the hardest things about doing the Whole30 is finding sausage and bacon that doesn’t have added sugar or weird ingredients. I know, those things aren’t necessary foods, but they’re nice to have and add so much flavor to meals. There was only one breakfast sausage I found that was Whole30 approved, but it was at a store an hour away and it wasn’t cheap. After buying it once I knew I should just make it myself. It’s crazy how simple it is- there’s no need to ever buy it again. You could even make a double batch and freeze half of it for a quick meal.
Seasonings
Sage is what really gives it that signature sausage taste. I remember growing up, we made biscuits and gravy with sage sausage, so I definitely like to be generous with it- sometimes I even add extra. I like to buy fennel in the bulk section, but I just get a tiny bag of it. This is the only recipe I use it in and I don t need a whole jar.
I eat a lot of eggs and they can get boring, so this is such a great way to switch it up. This sausage has all the delicious signature spices and none of the sugar or preservatives of store bought. It is our favorite!
This sausage is good in baked eggs, in a hash, made into patties or just served along side eggs and potatoes. You will be so surprised how simple it is to make and how delicious it is! Make it once and never go back! Here are some more breakfast recipes to love:

Paleo Breakfast Sausage
Ingredients
- 1 pound ground chicken or turkey read labels to make sure there’s no added ingredients
- 1 teaspoon salt
- 1/2 teaspoon cracked pepper
- 1 teaspoon dried sage
- 1/4 teaspoon fennel
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon red pepper flakes
- 1 tablespoon coconut oil for cooking
Instructions
- Place coconut oil in a medium frying pan.
- Add chicken, salt, pepper, sage, fennel, onion powder, garlic powder, and red pepper flakes.
- Mix together and cook over medium heat until fully cooked through. About 5-7 minutes.
- Eat or use as desired.

Ok, I was needing new options for my GF that is on a very strict lowcalorie/carb/fat diet, and also for our 6 yr old who has ever only eaten whole foods. I used foster farms ground turkey breast. (99% fat free nothing added). I have had premade Turkey sausage in the past and not a big fan. Must say though that This is completely different. It has FLAVOR!!!!!!! I am sold. We all love it. Now then, I added my own twist to it because that’s just who i am. I was out of ground sage and used Majoram in place, also added a TBLSP of fresh chopped fennel leaves to add to the whole fennel seed. WOW….. just……WOW.

Hey Jessica, I wanted to give you an update on the chicken sausage. It is so popular here at our house, I was forced into getting the meat grinder attachment for our kitchenaid. I average about 7 lbs per batch. Here recently, I started dehydrating my own seasonings and put them through a spice grinder. It creates a fine powder, but I find that it gives a more intense flavor. I also have started adding 1 1/5 tsp. liquid smoke to each lb of chicken. Next step is to get a sausage stuffer and casings to make link sausage.

I also use my kitchenaid meat grinder attachment to make my own! It’s so much more cost effective as I can just buy a bunch of pork or chicken on sale, grind it, and freeze it. I freeze unseasoned in 1.5 pound packages so that I can use it for either a recipe that calls for ground meat or for sausage. I haven’t tried stuffing sausage casings yet, but I do sometimes mix the seasonings in, form into patties, and then cook and freeze those. Great for a quick and easy breakfast!

Excellent & so easy!! Always keep this on hand in the freezer for various breakfast uses! Also amazing with any type of sweet potato or winter squash! I’ve been making this for years now and found a shortcut to save a little time! I measure five or 10 batches of the spices out at one time (as listed above) & place in little screwtop jars. That way all I have to do is pour and go! A tried and true family favorite! 👌👌👌
