Making homemade sausage is so great because you can control what goes in it and it's so simple to make. A handful of spices and 10 minutes for some truly delicious breakfast sausage.
Breakfast Sausage Seasonings
Sage is what really gives it that signature sausage taste. I remember growing up, we made biscuits and gravy with sage sausage, so I definitely like to be generous with it- sometimes I even add extra. I like to buy fennel in the bulk section, but I just get a tiny bag of it. Salt, pepper, garlic, onion and red pepper flakes round out the spices to give it so much flavor.
I eat a lot of eggs and they can get boring, so this is such a great way to switch it up. Or add it to a breakfast casserole or patty it out for a breakfast sandwich. So many options!
Chicken, Turkey or Pork
I usually buy ground turkey for this because it's easy to find, but ground chicken or pork both work just as great.
This sausage is good in baked eggs, in a hash, made into patties or just served along side eggs and potatoes. You will be so surprised how simple it is to make and how delicious it is! Make it once and never go back! Here are some more breakfast recipes to love:

Paleo Breakfast Sausage
Ingredients
- 1 pound ground chicken, turkey or pork
- 1 teaspoon salt
- ½ teaspoon cracked pepper
- 1 teaspoon dried sage
- ¼ teaspoon fennel
- 1 teaspoon onion powder
- ½ teaspoon garlic powder
- ¼ teaspoon red pepper flakes
- 1 tablespoon coconut oil for cooking
Instructions
- Place coconut oil in a medium frying pan.
- Add chicken, salt, pepper, sage, fennel, onion powder, garlic powder, and red pepper flakes.
- Mix together and cook over medium heat until fully cooked through. About 5-7 minutes.
- If baking, divide into 8 patties ¼ inch thick. Cook at 350° for 20 minutes.
- Eat or use as desired.

Excellent & so easy!! Always keep this on hand in the freezer for various breakfast uses! Also amazing with any type of sweet potato or winter squash! I’ve been making this for years now and found a shortcut to save a little time! I measure five or 10 batches of the spices out at one time (as listed above) & place in little screwtop jars. That way all I have to do is pour and go! A tried and true family favorite! 👌👌👌

Ok, I was needing new options for my GF that is on a very strict lowcalorie/carb/fat diet, and also for our 6 yr old who has ever only eaten whole foods. I used foster farms ground turkey breast. (99% fat free nothing added). I have had premade Turkey sausage in the past and not a big fan. Must say though that This is completely different. It has FLAVOR!!!!!!! I am sold. We all love it. Now then, I added my own twist to it because that's just who i am. I was out of ground sage and used Majoram in place, also added a TBLSP of fresh chopped fennel leaves to add to the whole fennel seed. WOW..... just......WOW.

Hey Jessica, I wanted to give you an update on the chicken sausage. It is so popular here at our house, I was forced into getting the meat grinder attachment for our kitchenaid. I average about 7 lbs per batch. Here recently, I started dehydrating my own seasonings and put them through a spice grinder. It creates a fine powder, but I find that it gives a more intense flavor. I also have started adding 1 1/5 tsp. liquid smoke to each lb of chicken. Next step is to get a sausage stuffer and casings to make link sausage.

I also use my kitchenaid meat grinder attachment to make my own! It's so much more cost effective as I can just buy a bunch of pork or chicken on sale, grind it, and freeze it. I freeze unseasoned in 1.5 pound packages so that I can use it for either a recipe that calls for ground meat or for sausage. I haven't tried stuffing sausage casings yet, but I do sometimes mix the seasonings in, form into patties, and then cook and freeze those. Great for a quick and easy breakfast!

Suggest you mix all the spices together in a little bowl and then add to broken up turkey/chicken in the frying pan. Add a 1/4 cup of water to frying pan and stir semi-vigorously to mix in spices into meat before the water evaporates.
Also, I suggest you let turkey or chicken come to room temperature before adding it to frying pan as it makes it easier to break it up.
